Ingredients:

  • Chicken drum sticks / thighs: 500g
  • Half head of garlic
  • Dried chilli cut into pieces: 1 Tbsp
  • 2 Green pepper an 2 Red pepper
  • Caster Sugar : 1 Tbsp
  • Dark soy sauce: 1 Tbsp
  • Light soy sauce: 3 Tbsp
  • Oyster sauce: 1 Tbsp
  • Spicy Chilli Bean Sauce: 1 Tbsp
  • Chinese cinnamon sticks: 1 stick
  • Small piece of ginger
  • 2 star anise
  • 2 bay leaves
  • 4 spring onion, finely chopped
  • Plain flour
  • Salt : 1 tsp
  • Lager: about 300ml
  • Plain flour:200g

Method:

Letโ€™s Make the dough first:

  1. Add salt to plain flour, mix it finely with water( water is about half amount of flour) , and stir the mixture well and leave it aside.

Chicken part:

  1. Add oil into the pan with low heat, fry the garlic cloves until it turns gold, take the garlic out and not crush it.
  2. Then using the same pan, add spring onion, ginger, start anise, cinnamon ,bay leaf, and dried pepper, chilli Bean sauce into the pan, stir fry until nice scent comes out of them.
  3. Then add chicken into the pan, with green and red pepper. toss some sugar and mix well, stir fry until the chicken turns to a light yellow colour, not burnt.
  4. Add dark soy sauce, light soy sauce, oyster sauce, and lager into the pan, let the chicken being just covered by the liquid, close the lid and cook it for about 30 minis on low heat.

Turn back to work on our dough:

  1. The dough should be much soft now, knead it for about 2-3 mins, then cut into 12 pieces, make each of them look like a round ball
  2. Preparing a bowl of cold water, put these flour ball into the water, it will not melt in the water.

(Leave it about 5mins)

  1. Take these flour ball out of bowl, shape them into an oval shape with your hands, and stick each of them to the side of pan, half of the dough is soaked in then chicken sauce, add more water into the pan as these dough will absorb the sauce from the chicken.
  2. Put the lid back on, stew it with further 15mins. And put the garlic back into the sauce before turn the hob off.
